Grilled Pork Chops with Italian Relish Yield: 1 servings ------------------------------------------------------ Ingredients: 4 large Pork chops ----MARINADE------------- 1/4 cup Soy sauce 3 tbl Dijon mustard 1 tsp Chopped garlic 1 tbl Honey 2 x Lemons, juice of 1 tbl Dried sage 1/4 cup Olive oil ----RELISH------------- 6 x Roma tomatoes - seeded, diced 3/4 cup Chopped red onion 1/4 cup Red wine vinegar 2 tbl Olive oil 1 tbl Chopped garlic 2 tbl Minced fresh basil 1 tbl Minced fresh oregano Directions: Whisk together in a mixing bowl the ingredients for the marinade . Place the pork chops in a large freezer bag and pour marinade into bag. Place bag into refrigerator to marinate for 1 hour. To prepare the relish, combine all ingredients in a small bowl. Set aside. To cook the chops, place on the barbecue for 6 minutes per side, until cooked through. Serve with relish. |
