Italian Beef and Potato Casserole Yield: Approximately 5 Servings Ingredients: 1 lb Lean ground beef 5 1/2 oz Package scalloped potatoes 16 oz Can tomatoes 10 1/2 oz Can tomato sauce 1/2 cup Water 1/2 tsp Salt 1/2 tsp Oregano 1/4 tsp Basil 1/8 tsp Garlic powder 1 cup Mozzarella cheese -- cut these into 1" cubes 1/4 cup Grated parmesan cheese Method: In a skillet or slow-cooking pot with browning unit, brown the meat until crumbly. Then drain off the fat. In slow-cooking pot, combine beef with dry sauce mix from package of scalloped tomatoes , tomato sauce, potatos, salt, water, oregano, basil and garlic powder. Stir in the dry potato slices. Cover and cook on low 4 to 5 hours. Turn control to high. Next, stir in the cubes of mozzarella cheese . Top with Parmesan cheese . Cover and cook on high for 10 to 15 minutes. |
