This Italian recipe for Calamari Fritti (or Fried Squid) is often used as a Christmas Eve appetizer, especially in southern Italy:

Ingredients

3 lbs. squid, cleaned
2 eggs
1 tablespoon grated onion
salt and pepper
1 cup of flour
1 12 oz. can of beer
1 garlic clove, minced
olive oil

To prepare:

Cut squid in 1" rings. Combine flour, eggs, beer, onion, garlic, salt and pepper. Dip small handful of squid rings in flour and egg batter. Deep fry in hot oil until brown and tender. remove with slotted spoon and drain on paper towel. Garnish with lemon slices.

Rings may be dipped in a Marinara sauce or cocktail sauce.

"Just want to pass a hint when making stuffed calamari. After they have been cleaned, if you can then turn them inside out, then you can stuff them and you won’t need to either sew or use toothpicks as the calamari will close if you saute them a couple of minutes."
